For Koftas:
300 gms Lean lamb ( minced )
1 Tblspn Ginger paste
1 Egg
2 ( medium ) grated onions
1/2 Cup coriander and mint leaves ( chopped )
1/2 Tsp Haldi ( Turmeric powder )
1 Tsp Chili powder
1 Tsp Dry Coriander powder
2 Tblspns Wheat powder
1 Tsp Salt
Mix all ingredients together and keep aside for 15-20 mins.
For Browned Onion Powder:
2 Big Onions ( sliced )
Oil for frying.
Fry onions till brown. Drain and set aside for 30 mins. Crush and ground to
powder. [ Tip 1 onion = 1 1/2 Tblspn brown onion powder ]
For Curry:
3 Tblspns Oil.
250 gms Yogurt ( thick )
1 Cup Water
3 Tomatoes ( pureed )
3 Tbspns Brown onion powder
2 Tblspns Gram flour ( besan )
1 Tblspn Garlic paste
1 Tsp jeera
2-3 Cardamoms
1 Tsp pepper corns ( 4-5 )
1 stick cinnamon
1/2 Tsp Haldi ( Turmeric powder )
1 Tsp Chili powder
1 Tsp Dry Coriander powder
3 Green chillies ( slit )
3-4 Curry Leaves
1 Bay leaf
